Healthy Carrot Roll Recipe:
5 grated carrots
1.5 cups cooked quinoa
1 cup toasted seeds (sesame & pumpkin)
2 cups sauerkraut
0.5 cup olive oil
1 cup cider vinegar
pinch of sea salt
Mix ingredients in a large bowl, adding the cider vinegar and olive oil gradually - so you get the desired balance. I like my mix quite fresh so tend to add all the vinegar.
Dip rice paper wraps into hot water to soften, spread on plate. Add a spoonful of carrot mixture to centre of the wrap and roll up like a spring roll.
These keep for a few hours in air tight container - but are best eaten fresh.
